The two projects your school is involved in (Belize, Antarctica) sound fabulous!  Webcasting sounds perfect for allowing others the opportunity to learn and be involved.  I noticed that your sample rate is 11 - should be 44 or 22.  You'll find the setting in Audacity - Edit > Preferences > Quality.
